When you think about Thanksgiving a few weeks in advance, it probably leaves you with a warm feeling. On the holiday, friends and family gather to share a traditional meal, express gratitude, and enjoy each other’s company.

On the day of Thanksgiving, you might be feeling differently. If you’re the chef to whom the bulk of the cooking falls, this day can get pretty crazy. Between preparing a fairly large bird, crafting plenty of side dishes, and still being expected to turn out a decent looking pie or two, Thanksgiving isn’t easy in the kitchen.

We know the struggle, and we want to help! That’s why we’ve handpicked this Thanksgiving recipe for cranberry sauce that you can make ahead. To take at least one thing off your to-do list, you’ll need:

  • 2 tablespoons of unsalted butter
  • 2 tablespoons of freshly grated ginger
  • 1 cup of orange juice
  • ½ cup of dark brown sugar
  • 16 ounces of fresh or frozen cranberries
  • ½ cup of orange marmalade
  • 2 tablespoons of minced cilantro
  • ½ teaspoon of black pepper

Melt the butter in a saucepan over medium. Add the ginger and cook for two minutes, stirring regularly. Add in the orange juice, sugar, and cranberries.

Cook until the cranberries burst open, forming a thick sauce. Stir in the marmalade and remove from the heat.

Right before you serve the sauce, stir in the cilantro and pepper.

You can make this sauce up to four days in advance; just keep it refrigerated!

It’s crazy but true: the summer is already over. If you’re getting ready to send the kids back to school—or perhaps you already have—you’re probably running a little ragged. Transitioning out of the summer and into the more rigorous schedule of the school year is always a little hectic.

We want to help make it easier for you, though! Make school nights a little less busy by whipping up this delicious and healthy back to school recipe for watermelon salad with feta and mint.  All you need is a few minutes, one serving bowl, and six ingredients!

  • ½ cup of lime juice (you should need between 4 and 6 limes)
  • ½ cup of chopped red onion
  • 8 cups of chopped, seeded watermelon (you should need about ¼ to ½ of a watermelon)
  • ½ cup of crumbled feta
  • ¼ cup of thinly sliced fresh mint
  • ½ cup of chopped fresh parsley

Toss the lime juice and onions together in a large serving bowl; let sit in the refrigerator for 15 minutes.

Pull the onion/lime mixture out and add in the rest of the ingredients. Toss together and serve immediately! Easy peasy lime squeezy!

Salmon Burgers For Summer

During the summer, everyone seems to be lighting up their grill. While the barrage of burgers and hot dogs is great for a time, after a couple of months of eating these heavy foods you might be ready for an alternative, healthy option. Fortunately, you can get it! For a fresh twist on the classic burger, whip up this recipe for a delicious salmon burger to enjoy this summer.

To make them, you will need:

  • 1 cup of finely chopped red onion
  • ½ cup of thinly sliced fresh basil
  • 1 1-pound skinned salmon fillet, chopped
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 1 tablespoon of hot sauce
  • 1 egg white
  • Cooking spray
  • 8 slices of focaccia
  • Your favorite burger toppings (e.g. sliced tomato, lettuce, sliced onion)

In a large mixing bowl, combine the onion, basil, salmon, salt, and pepper, mixing with your hands until well blended. In a separate, small bowl, whisk together the hot sauce and egg white. Add it into the salmon mixture and mix well.

Separate the salmon mixture into four patties about a ½ inch thick. Coat a nonstick skillet with cooking spray and heat it over medium-high. Add the patties and cook until done (about 3 minutes each side). Meanwhile, toast your focaccia.

Serve the patties sandwiched between the focaccia with your favorite toppings and enjoy! Personally, we love a squeeze of lemon and a few capers to really zest up this burger.
